Ingredients

  • Crushed tomatoes
  • Zucchini
  • Carrots
  • Onions
  • Garlic
  • Celery
  • Vegetable Broth
  • Kidney Beans
  • Great Northern Beans
  • Olive Oil

Steps

This recipe follows the basic pattern

  1. Sautee Onions, Celery, Carrots on medium heat. Cook until fragrant (but don’t caramelize the onions!!)
  2. Add in Zucchini and garlic, cook until fragrant. Be very careful not to burn the garlic (punishable by death)
  3. Add in vegetable broth and crushed tomatoes. Bring to a boil, and then simmer until Zucchini is soft.
  4. 5 minutes before serving, add beans. Continuing simmering until thoroughly cooked.
